ICAR-CPCRI, with financial support from the Coconut Development Board, launches an innovative tree-top Coconut Sap Concentrator designed to pre-concentrate coconut inflorescence sap directly at the collection site. The system aims to reduce the impact of fermentation that can occur when freshly collected sap is kept at ambient temperatures.
The outlets describe coconut inflorescence sap as a nutritious beverage that contains sugars, minerals, and other nutrients, but also note that its high sugar content makes it prone to rapid fermentation. By concentrating the sap before further processing, the technology is intended to improve handling and cut downstream production costs. One report says the approach reduces sugar production cost by 53.4%, based on pilot-scale work by ICAR-CPCRI.
